From here the wine went into to Demi-Muid until it was bottled in august 2023

The slow loss of water through the walls of the wooden casks facilitates the continuous process of concentration

They are fermented in 2400 liter oval wooden casks with indigenous yeasts. The wine then spends about 2 years aging in neutral wooden casks. Bottled without fining or filtration, no sulfur added.
